If you have the time and the inclination grasshoppers are a fascinating source of study. But if you really want fascination ( and challenge) try flies!
If I find the time, I might. Flies are interesting, goodness knows we need them. Talking of flies, I was reading about the use of maggots in the medical field. Amazing really.
